Created by Head Chef Dylan Perry, this exclusive five-course menu showcases premium Australian ingredients, from wallaby and grass-fed Victorian beef to native pepperberry, bush honey and lemon myrtle, each brought to life with San Telmo's signature charcoal cooking and bold Argentinian techniques.
