The centrepiece of San Telmo is our traditional Argentinian Parrilla charcoal grill — a bespoke 2.5 metre grill handcrafted in Argentina by Pirincho, a master of the craft.

Built for live fire cooking, the Parrilla brings together charcoal, smoke and intense open heat to create depth, flavour and character in every dish. More than a cooking method, it is an integral part of Argentine dining culture; a place where food is prepared with patience, shared generously and celebrated with respect for the ingredient.

Positioned at the heart of our open kitchen and surrounded by bar seating, the Parrilla brings guests close to the energy of the grill: from flame-kissed seafood and produce to perfectly cooked cuts of meat.

The
History

WHERE THE SAN TELMO STORY BEGAN

Every San Telmo meal can be traced back to a table in Buenos Aires, where a group of friends thought of a plan: to bring the tastes and ethos of Argentina all the way to Melbourne.

And so San Telmo began, scribbled on a napkin over glasses of Malbec. The business plan came together on the 16 hour plane trip home, and in 2011, became San Telmo Melbourne.

Today, that same spirit lives on in both Melbourne and Brisbane.

WARMTH, COWHIDE AND OLD-WORLD CHARM

Inspired by the bodegas of Argentina, our interiors balance old-world character with contemporary Australian open-plan dining. Rich, tactile materials such as imported cowhides and leather meet ambient lighting and open views of the kitchen to create spaces where fire, hospitality and atmosphere become inseparable.

Antique doors dating back 300 years and historic 1930s coloured glass soda bottles sourced from San Telmo in Buenos Aires create authentic connections to the neighbourhood that inspired our name, weaving elements of Argentine heritage throughout the space.
